Wild boar – European game
Wild boar is a powerful game animal with dark meat and a distinctive flavor. The animals live in forests and feed on chestnuts, roots, and herbs – which gives the meat its unique aroma.
Wild boar is perfect for hearty stews, game burgers, or ragouts with spicy sauces. Consider pairing it with bay leaves, rosemary, and juniper berries.
Deer – European Game
Venison is lean, tender, and has an elegant, slightly gamey flavor. It's one of the most beloved game species because of its refined texture and culinary versatility.
From venison steaks to red wine stews, venison pairs perfectly with autumnal flavors like mushrooms, berries, and root vegetables. A classic during game season.
Rabbit – European Game
Rabbit is light, lean, and delicately flavored. In the Netherlands and France, it's a traditional ingredient in home-cooked stews.
Perfect with mustard sauce, white wine, thyme, or beer. Also suitable for roasting or using in ragouts.
Hare – Only in the Game Season
The hare is a true game specialty, available only during the game season. The meat is dark, firm, and has a deep, gamey flavor. Wild hares live in open fields and feed on herbs and grasses, which contribute to their distinctive flavor.
Traditionally made into jugged hare or tenderloin, served with rich sauces and seasonal vegetables. A dish for the true game lover.
